Spaghetti with roasted Zucchini and Mushrooms - Vegan - Gluten Free
Yum! This was so delicious 😍🍝😋🍝😍🍝😋🍝😍 Tinkyada brown rice pasta (I order it online from iherb). 😍💞😍 Homemade tomato sauce, (recipe posted the other day on Instagram), with some mushrooms and zucchini (air fried for 10 mins), some white beans and a splash of thick cashew milk. So easy! You can add some vegan cheese if you like 😉
Adding beans to pasta instead of meat is so easy. If you want to disguise them as you get used to the taste, you can mash them up in the sauce. Beans are really, really, really good for us, even keeping blood sugars more stable well after they are digested (search for info on Dr Gregers Nutritionfacts.org) They are head over heels better weight for weight compared to meat and there are so many fabulous recipes including beans now online, it makes it so easy to keep inventing new favourite dishes. They also have loads more nutrients and none of the stuff that's going to be bad for us, or the animals. Save lives, help yourself. Eat beans. Go Vegan 🌱😆😙😆🌱 😙 Sarah
