I think spring is so pretty to compensate us on how bad she makes us feel lol!
The Addison's disease brings about lots of weakness and stomach troubles so eating has been a bit of a challenge! I ended up eating a few processed foods during my worst time, potato chips and a cup of continental soup, resulting in hives, I always had this problem, it had gone away, now I know why! I'm still finding it hard to eat some foods like nuts, so I have created some new recipes so I get some goodness in me easily.
I made the first lemon cookies while I was really sick and needed to eat solids again, they were very easy to eat.
2 cups Gluten free flour
1 flax egg
1/2 lemon juice and zest
1/2 cup melted coconut oil
1/3 cup coconut sugar
Mix together and place spoonfulls on a tray and bake for approx 20 mins at 160 C
The next recipe combinations I'm eating now so I have some nuts and seeds back in my diet, very scrummy and hopefully working to build me back up again!
1 cup gluten free flour1/2 cup dedicated coconut
1 cup of mixed seeds and/or nuts variations
I used for my first batch...
half/half cashews and almonds
And for my second batch...
pumpkin seeds and sunflower seeds
Place nuts and seeds in a coffee grinder and grind finely
1/3 cup coconut sugar - alternatively maple syrup works great too.
Pinch salt
1/2 cup coconut oil, melted
1/2 lemon juice and zest
Combine in a bowl and then place spoonfuls of mix onto a baking tray, bake at 160 C for 20 - 30 minutes
